This salsa is great. I don't mix in the
tomato; I put individual freshly cut servings of it on plates or put it in
a separate bowl so it doesn't shorten the life of the salsa.
If you don't have the umeboshi plum vinegar, substitute
more cider vinegar and nama shoyu or miso for the bite and saltiness.
If you like it hot and your family doesn't, make it mild but set aside
a portion with more peppers for a hotter version.
